
My mom, who was visiting last night, commented, "Did you ever think that Michael (my brother) would be such a good cook?" My answer was no. You see my brother hated being in the kitchen when he was young. He had to be coerced into doing the dishes when it was his turn. I can actually remember him pleading with me, "Lori please do the dishes for me, I'll pay you!" Sometimes I could be bought but other times it was a matter of principle. It was
his turn.
Now Michael is a master cook. At his house he does the all the cooking and he loves it! So last night he cooked us Chicken stuffed with bacon and pesto. So for all you cooks out there here's how he did it:
cut your chicken breast in half just enough to open it; cook your bacon crisp and crumble it and for each chicken breast you mix one teaspoon of pesto with some crumbled bacon and stuff that into the breast. Bake in the oven at 375 for 30-40 minutes and if you have any pesto left over brush it onto the top of the chicken breasts. Yummy!
AND then he made an exquisite Italian Crostata di albicocche. Recipe availabe upon request. So having my little brother visit has been wonderful along with my niece and her daughter.. the Holy Terror.. Penelope.
